How To Freeze Peaches

Have you been buying baskets of peaches? How many of you buy the basket of peaches but find they go moldy because you don’t eat them fast enough? This almost happened in my house until I found a way to make them last. By freezing them! Freezing them at their peak ripeness lets you enjoy them months later, and helps you decrease food waste. Win-win!

There is a certain way to preserve peaches so they last for up to 6 months. Any longer and they may start to taste a little stale.

This is what I have done to preserve the peaches from the farmers’ market. Try it yourself to save your peaches and reduce food waste!

Leave the Peach Skins On

Freezing them at peak ripeness preserves their sweet flavour and texture. I have seen other food bloggers remove the skin by boiling them first. I don’t remove the skin because the skin adds extra roughage (aka fibre). Also, there are more antioxidants in the skin of the peach. It’s also extra work to remove them. All the more reason to keep the skins on!

Frozen peaches can be used months later in different recipes: Smoothies, peach cobbler, in oatmeal and for other delicious desserts!

How to Stop Peaches from Browning

The lemon/lime juice helps to prevent further browning of the fruit.

Have you noticed with store bought frozen fruit how perfectly frozen they look?

Store bought frozen fruit use a flash freezing process. This flash frozen technology of preserving fruit (and other frozen items) prevents the fruit from further browning and prevents ice crystals from forming. It helps the food keep longer.

Freezing at home is not with the same technology used with flash freezing technology. Most people don’t have flash freeze technology at home. Therefore, this added step helps to maintain their nice colour. This way, months from now when you want to use them – they will still look great!

Parchment Paper on Baking Sheet

This method freezes them all evenly. Make sure to cut them all the same size.
The parchment paper prevents them from sticking to the baking sheet. It’s no fun to remove frozen peaches directly off the baking sheet – trust me, I’ve been there before!

Recipe: Frozen Peaches

Prep Time 15 mins |FREEZE TIME 4 Hours | Total Time 4 hours, 15 mins 

Ingredients

4-7 ripe peaches, washed

Juice of one lime or lemon

Instructions

  1. Line a 9 x 13” baking sheet with parchment paper. Set aside.
  2. Slice peaches into quarters, and again into eights. It doesn’t matter how small you cut them, as long as they are all the same size.
  3. Place in a bowl and squeeze lime/lemon juice. Stir gently to coat.
  4. Line on baking sheet. Freeze for at least 4 hours.
  5.  4 hours later, remove baking sheet from freezer.
    6. Put into a plastic bag labelled with date and item.
